Autumn in Abruzzo is synonymous with warm colors, intense scents and authentic flavors. Among the undisputed protagonists of this season is the chestnut, a fruit that has accompanied peasant life for centuries and today represents a symbol of conviviality and gastronomic culture.
The queen of the woods: the Roscetta chestnut
In Abruzzo, the most famous variety is the Castagna Roscetta della Valle Roveto, listed as a Traditional Agri-food Product (PAT). It is distinguished by:
- Shape: ovoid or globular, medium to large in size.
- Color: red-brown, from which the name “roscetta” is derived.
- Nutritional properties: rich in complex carbohydrates (about 60%), protein, minerals (magnesium, potassium) and vitamins A, B and C.
- Versatility in the kitchen: from classic roasted chestnuts to soups to desserts such as mousses and cakes.
Harvesting takes place between the second half of October and November, often using traditional methods that preserve the integrity of the fruit. The centuries-old chestnut groves of the Roveto Valley and Sante Marie are picturesque settings for hiking and harvesting.
